Hello all, Happy St. Patrick’s Day! While your social media feed is probably blown up with photos of green beer and clovers, I wanted to take a different approach and share with you all a simple smoothie recipe I make every day to ensure I get my greens.
From my previous post, I shared a bit about my unhealthy relationship with food. While I was obsessing over calories, I was severely missing out on the nutrients I needed by not eating the fresh fruits and veggies that my body craved. This time around, I’ve made it a new personal goal of mine to get more veggies into my daily diet.
I get it, we’re human, we won’t always have time to create a meal plan or prepare our veggies the way we like. One of the ways I’ve been kind of cheating this has been to start and end my day with this green smoothie recipe. The ginger and lemon added to this smoothie is a wonderful digestive kick to start off the day. Before eating dinner (or after an evening workout), I’ll have another one of these bad boys to satiate myself and prevent from over-eating.
I use a food processor (because I don’t have a blender :p) to mix all of my fresh ingredients together and always make sure to use twice as many veggies than I do fruits. The end result is a deliciously satisfying start and end to my day. Give the recipe a try and let me know what you think!
Daily Green Smoothie
- A handful of organic spinach
- A handful of organic Kale
- 1/2 stick of organic carrot
- 1/2 ripe banana
- 1/2 cup of organic blueberries
- 1/2 inch smashed ginger
- Squeeze of lemon juice
- 1/2 cup coconut water or water (or mix the 2)
Place all ingredients in a blender or food processor and pulse until at desired consistency. Add water, coconut water, or ice as needed. Enjoy!
